Homemade vanilla extract
- 6-8 whole vanilla pods
- 350 ml vodka
- 500 ml glass bottle tight seal
- Begin by using a sharp knife to carefully split the vanilla beans down the length, exposing the inner beans without splitting the pod completely.
- Pour vodka over the vanilla beans, you can use a funnel to make this easier. Add a bit more vodka if necessary, ensuring that the beans are fully submerged. Give the mixture a few shakes.
- Store your vanilla extract at room temperature, in a dark cupboard.
- The vanilla can be ready for use in as little as 2 months but the longer you leave it the more flavourful it becomes. A delightful depth of flavour can be achieved with a longer aging period, making 6-12+ months an excellent choice.
- Simply add new pods to the old ones, shake well, and continue to use as needed.
- After the second batch is finished, simply remove the old pods, add fresh pods and start again.
