Spiced carrot cupcakes
Ingredients
Cupcakes
- 200 g grated carrots (2 medium sized)
- 110 g vegetable oil
- 100 g caster sugar
- 100 g dark brown sugar
- 2 eggs room temp
- 140 g greek yogurt
- 1 tsp vanilla extract
- 240 g plain flour sifted
- 2 tsp baking powder
- 1 tsp bicarb
- 1 tsp ground cinnamon
- ¼ tsp mixed spice
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- ½ tsp salt
Buttercream
- 225 g unsalted butter softened, room temp
- 510 g icing sugar sifted
- 1 ½ TBS lemon juice or until desired consistency
Instructions
Cupcakes
- Preheat the oven to 175ºC (fan) and prepare your cupcake trays.
- In a small bowl, grate the carrots and set aside. In a separate bowl, sift together your dry ingredients - flour, baking powder, bicarb, salt and spices.
- To a large bowl, add oil and both sugars and stir to combine, add the eggs and whisk until combined.
- Add your dry ingredients and whisk to combine (this will be a thick batter). Then add yogurt and vanilla extract and combine. Stir through carrots.
- Divide the batter between the cupcake tray and bake for 17-20 mins or until a toothpick comes out clean.
Buttercream
- In a stand mixer or hand mixer, beat the butter for 5 mins on a high speed, until light and fluffy. Scrape down the bowl.
- Add the other half and repeat the process.
- Turn the mixer to low and slowly add the lemon juice until you reach the desired consistency.
- Turn the mixer to high and beat for 1-2 minutes.
