Banana oat muffins

Ingredients

  • 3 ripe bananas mashed
  • cup smooth nut butter
  • 1 ¼ cup oat flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp bicarb
  • 1 tsp ground cinnamon

Instructions

  • Preheat the oven to 190°c (fan) and prepare a muffin tin.
  • Add all the wet ingredients, including the vanilla extract to a large bowl and whisk to combine.
  • Fold in the dry ingredients until a smooth batter forms.
  • Scoop the batter evenly into a prepared muffin tin and bake for 15-16 minutes.

Notes

* To make your own oat flour : Simply take rolled oats and pulse them in a food processor until they reach a fine, flour-like consistency.
*For an added treat, chop some chocolate into the batter before baking.
